Our weekend

Our weekend consisted of Danny's basketball game on Saturday morning, and a whole lotta staying home.

Danny has improved a lot, and was so excited to get a red star for "Best Defense." He was all over his man like white on rice. After the game and some lunch, Megan and Danny drew and played outside until nightfall while I did housework, and George and Zachary went to work. I keep telling them to enjoy being a kid, and from the looks of these pics, I think they enjoy it. 

Elvis Waffles

This morning, the kids and I only had a few minutes to eat breakfast before church. Instead of slapping some pop tarts on a plate for them, I got out my quick snack recipe book to see if anything looked "breakfast-y." I found the perfect thing for us to eat, Elvis Waffles. They are so easy, and as Danny says - "awesome!"

Peanut Butter (we use crunchy or natural for some texture)

Banana, sliced

Bacon (I always have bacon cooked for the week, so I broke it up into 1-inch pieces)

Honey

To assemble, toast the waffles and break apart into 4 individual waffles per person. Spread 1 tsp. of the peanut butter on the waffle. Top with a piece of bacon, a slice of banana, and drizzle a few drops of honey on top. That's all there is to it. Megan improvised and just made waffle/bacon sandwiches with a little syrup in the middle.



What my kids do in their spare time...

I know today is overload, but I've been waiting for photos to be downloaded so I could play a little catch-up. My last post for today, but certainly not the least important, is documentation of what my kids do when they don't have the tv to entertain them (we hardly turn it on at night).

I can't say it's cruelty to their little brother as the princess dress was his idea. I wasn't involved - Megan and Zachary were photographers and players in this drama. I'm not sure that they're completely innocent, though, as this is definitely potential blackmail material.

Besides being one of my favorites perfumes, obsession is thinking about something all the time, 24/7. This is the way Danny feels about his new favorite sport. Can you tell?

Lemon extract

My friend, Kara, gave me a big bottle of organic vodka, and I spent several weeks wondering what I was going to do with it (contrary to popular belief based on previous posts, I really don't drink a lot at all). I decided to make some homemade lemon extract with the three lemons that had been hiding in my produce drawer. Basically, I took a sterilized 16oz. mason jar, zested the three lemons into it (carefully - don't want to get any white pithy part in there) and filled it with the vodka. I placed it in my favorite dark spot (where else but my closet?) and took it out after two weeks. I strained it into one of my leftover vanilla bottles, and I used it to make a 7 Up cake with lemon glaze. Another home-made hit!

Danny decided to try something other than soccer this year, and we all felt that the Upward Basketball program at our church was the perfect program. So far, he has been playing for a total of 2 weeks, and he has come a long way considering that he had never bounced a full-sized basketball before then. George and Megan have taken some great shots of him last week in practice...

and today at his first game.

Now we have to work on something other than passing during the games :).  I'm so proud of him, and today he got a star for most Christ-like attitude. Can't wait to see what he does next week. 

Where did September go?

Last weekend, I switched over the calendar from September to October, and I was amazed at how quickly September flew by. Highlights? A visit to Jacksonville and a Nook. Megan got a Nook for all of her hard work and great grades last school year, and she has not put it down since. George even made her special wallpaper and we got her a peace/heart cover for it.

Granny's 80th birthday, my parents' 39th wedding anniversary, and a visit to UNF all happened in one weekend trip to Jacksonville, and we had a great time. The kids especially enjoyed visiting Daisy.

I really enjoyed seeing UNF again - it brought back memories of how much I enjoyed college there. Megan even said she would like to go there one day. Not any time soon, though, as I don't want her growing up too fast.
